Levocarnosine has potential antioxidant and anti-glycosylation activity. Block acetaldehyde induced non-enzymatic glycosylation and protein coupling. It is also a substrate for carnosinase detection, which can maintain pH balance in the body and extend cell life (refer to related literature)
